The Mouse and Toucpad Settings in Gnome 3 by paldo are very simpel. I missing the settings for disabling "tab to click". Where can i configure it?

I see the "Tap to Click" option in the "Mouse & Touchpad" settings. The window is a bit small, so you may have to scroll, but the setting should be there. It's only visible if the input driver advertises hardware that supports it. However, as it's currently enabled for you, this shouldn't be the issue.

Alternatively, you could try changing the setting in dconf Editor: /org/gnome/desktop/peripherals/touchpad
